A Lot of Things, Actually

MENU UPDATES · RARE SPIRITS · CORAVIN WINES · NEW COCKTAILS

Houston's River Oaks dining scene is about to get a little more interesting. At Fielding's Steak, we've spent the past season listening to our guests, to the seasons, and to the stories behind the world's most extraordinary ingredients.

The result is one of the most meaningful menu evolutions we've put forward yet. From a 42oz Australian Wagyu Tomahawk to a Zero Margin Secret Spirits Menu where rare liquors are available at cost, here's everything you need to know before your next reservation.

NEW FOR DINNER
The Dinner Menu Gets Bolder
If you haven't been to Fielding's Steak for dinner recently, the new menu is reason enough to come back. Executive Chef Edelberto Goncalves has introduced several standout new dishes that round out our menu with more variety, more depth, and more conversation-starting moments.

42oz Australian Wagyu Tomahawk
Our most dramatic new addition. A full-blood Australian Wagyu tomahawk cut, perfectly marbled and wood-fire prepared. This is the showstopper for the table, a bone-in centerpiece built for sharing and serious steak enthusiasm.

Smoked Tartare
Beef tenderloin, bagna cauda emulsion, capers, quail egg, Pecorino Romano, served with rice chips. A refined, cold-smoke approach to a classic that makes a perfect starter before any steak.

Warm Burrata
Served with yeast biscuits, roasted pepper jelly, olive oil, and chive. Approachable, beautiful, and quietly one of the most satisfying things on the menu.
$14

Lobster Tail
Seven-spiced carrots, crushed pistachio, orange, Calabrian chili oil, and basil. A stunning chilled seafood plate that bridges the kitchen's love of bold spice with coastal elegance.
$29

Short Rib Ravioli
Bordelaise sauce, Roquefort espuma, pickled onions, fine herbs. Deeply savory, rich without being heavy, a pasta course worthy of any steakhouse in the country.

Spring Mafaldine Pasta VEGETARIAN
Genovese pesto, artichokes, burrata, toasted hazelnuts. Our answer to guests seeking a world-class vegetarian option at a steakhouse. This dish holds its own on any table.

Baked Potato
Bacon, creme fraiche ranch, comte cheese. The classic side done exactly right, a new addition to our sides that has already earned its permanent place.

The Zero Margin Secret Menu: Rare Spirits at Cost
This one deserves its own conversation. Fielding's Steak has quietly introduced a Zero Margin Secret Menu available Sunday through Thursday, a curated selection of some of the world's most allocated and sought-after spirits, offered to guests at the restaurant's actual cost.
This isn't marketing. It's a genuine hospitality gesture, an opportunity for our guests to experience high end spirits they may never encounter elsewhere, at prices that reflect our cost rather than typical markup. Below are just a few of the liquors featured on the menu. The selection rotates as we move through our rare inventory, making every visit potentially different.

Clase Azul Tequila, Dia de Muertos Edition
An ultra-premium anejo aged approximately 26 months in American whiskey barrels, then finished in Scotch whisky casks. A limited annual release in a collectible handcrafted decanter.
$92 ? 1.5oz

Double Eagle Very Rare Bourbon
A 20-year Kentucky straight bourbon aged twice for exceptional depth. Rich notes of oak, toffee, leather, and dark fruit. Presented in handcrafted crystal. One of the rarest extended-age releases from Buffalo Trace.
$201 ? 1.5oz

Weller Millennium
A blend of wheated bourbons and wheat whiskeys distilled between 2000 and 2006, making each component 18 to 24 years old. A once-in-a-generation expression of exceptional smoothness.
$437 ? 1.5oz

JCB 1969 Grande Champagne Cognac
A single-vintage 1969 cognac aged over 50 years, from a single barrel and distillation. Deep rancio character, dried fruit, cocoa, and a long, refined finish.
$353 ? 1.5oz

Macallan M
A no-age-statement single malt Scotch composed from rare sherry-seasoned casks including stocks dating to the 1940s. Presented in a hand-cut Lalique crystal decanter with an extremely limited global release.

Coravin Pours: Rare Wine by the Glass

Just added to our Wine Book, immediately following the Table of Contents, is our new Coravin page. Using preservation technology that allows us to pour from a bottle without removing the cork, we're now offering 3oz pours of highly allocated, rare wines that guests would never typically encounter by the glass.

This is an evolving, rotating selection designed to open doors to bottles that normally live behind glass, wines our guests may not yet know, and absolutely should. Ask your sommelier what's currently on the Coravin list.
