FOIE GRAS & CHAMPAGNE

Mango chutney, parmesan tuile

FIRST

 Illumination Sauvignon Blanc, 2023

Paired with   LOBSTER

Spring pea vichyssoise, saffron. grapefruit, ginger

Wine Notes

The 2023 vintage of Illumination reveals aromatic purity and incredible depth. Classic notes of grapefruit peel, lemon curd, and white peach are layered with undertones of ginger tea, wild thyme, and clover blossom—the floral character a hallmark of the cool vintage. On the palate, flavors of kumquat and guava mesh with wet slate and elderflower. A lovely textural roundness is balanced by racy acidity and minerality. While vibrant in its youth, this wine’s structure also promises aging potential.

SECOND

Flowers Chardonnay, 2023

Paired with   PROFITEROLE

Escargot, goat feta, tomato fondue, persillade butter

Wine Notes

Mouthwatering and vibrant, this Chardonnay balances elegance and energy with a seamless through line from nose to finish. Notes of fresh-evergreen aromas open to mandarin orange edged with pithy lime and layers of subtle coastal brininess. On the palate, the citrus—expressed with hints of plushness—stands in dichotomy with a beautiful backbone of acidity, as a distinctive herbal character emerges at the core. Lovely layers of texture derived from flinty minerality expand into a pure and vibrant finish.

THIRD

Quintessa Vertical  2016 / 2019 / 2021

Paired with    44 FARMS 'VERTICAL'

Filet Rossini / Char Siu NY Strip / Bourguignon
Celeriac truffle, Gochujang spinach gnocchi, brown butter trumpet mushroom

Wine Notes

A harmonious wine, the 2016 Quintessa possesses a round and elegant frame of alluring fruit tones and gorgeous florals. Impeccable balance and succulent acidity mingle with dark red and black fruit flavors and an elongated finish, resulting in the finesse and precision characteristic of a world-class wine.

The 2019 Quintessa offers nuance, depth, and great persistence. A complex of flower, forest, fruit, and earth notes harmonize with fine-grained tannin and vibrant acidity. It is a wine of precision as well as transparency. The 2019 Quintessa will drink well now for those who prefer a youthful expression but will also last in cellar for at least another twenty years for those who enjoy the complexities of age.

The 2021 Quintessa unfolds with the winemaker's signature balance of complex fruit, precise structure, and vital freshness amplified by a wonderful growing season. Floral notes—violet and lilac—lift an intensely aromatic bouquet of cassis and black cherry accented with anise, bay laurel, and forest floor. On the palate, firm but fine-grained tannins back dark berry and savory herb flavors interwoven with graphite and iron. Generous texture carries the complex layers to a fine, chalky finish.

FOURTH

Favia CabERNET SAUVIGNON, 2021

Paired with    BASTILLA

Roquefort, dry fruits & nuts, cinnamon, cacao, coriander honey crème

Wine Notes

From Napa’s rising-star Coombsville appellation, this 100% Cabernet Sauvignon balances power and elegance with effortless grace. Dark color and a solid structural framework provide the foundation for a wine that shows the full spectrum of this noble variety: bay leaf, blackberry, graphite, oolong, and fresh red cherry are just a few of the descriptors that come to mind. Twenty-two months of barrel aging helped to round the tannins, and bottling without filtration or fining ensure that the true expression of the vineyard and varietal is what lands in the glass.
